This week is going to be potluck, a potluck dinner that is.....
A recipe a day for a specific course.
VE is responsible for appetizers
Pepper is doing salad
JJ has to do a
meat dish
VS is doing a side dish
and Dude is our dessert person
By the end of the week you will have a complete menu for a weekend meal :)
Of course since we are NOT co-ordinating our dishes, it will be a true POTLUCK!
CHEESE PUFFS
1 Cup grated cheddar cheese
1/8 teaspoon salt
1/4 cup butter or margarine
1/2 cup sifted all-purpose flour
Early in day or the day before...place all ingredients in bowl...blend together using your fingers until dough is smooth. Refrigerate for at least 1/2 hour. Form into 1/2 inch balls, place on cookie sheet. Refrigerate. To serve bake balls at 350 degrees 10 to 15 minutes, makes 2&1/2 dozen.
OR
GUACAMOLE
2 medium avocados, ripe
1 tablespoon lemon juice
2 medium tomatoes, finely chopped
1 cup onion, finely chopped
1&1/2 teaspoon seasoning salt
1/2 teaspoon pepper
1 tablespoon chopped cilantro
Mash the avocados with a fork, add the lemon juice and blend. Add the remaining ingredients and combine thoroughly.
Makes 3 cups, serve with veggies or chips :)
