Pot Luck Continues!


Today is pot luck side dish for me!  I can't wait until the end of the week and see what VE is forced to make for the whole meal.  She did say she'd try whatever we post, didn't she?

Here is today's recipe and I had decided on Broccoli Casserole!

You'll need:

2 - 10 ounce packages chopped broccoli (thawed and drained)
 1 can of cream of broccoli soup 
1 cup mayo
 1 cup shredded sharp cheddar cheese
2 eggs-beatened
 1 cup of French's dried onions  
 
Combine ingredients and pour into 1 1/2 quart casserole.  Put crushed croutons on top.

Bake one hour at 350 degrees.

This is SO good my nephew and I argue over who gets the leftovers, if there is any!

Jambalaya for the Potluck

Jambalaya for the Potluck

Somehow I got to put up a recipe for a meat dish…..well, there is one problem with that. I don’t usually use a recipe. So I had to go searching for a recipe I like and would use. I got this one for Jambalaya from a collection of recipes from 1953. (keeping it vintage…lol)
I thought this would be a good one as you could make it to serve more than 4 people if you wish. Plus you can also season it more to your liking.



Here you go;

1 ½ cups diced cooked chicken
1 cup cooked rice
1 ½ cups cooked tomatoes
1 large onion chopped
1/2 green pepper chopped
1/2 cup chopped celery
1 tsp salt
1/8 tsp pepper
Buttered crumbs

Combine chicken, rice and tomatoes and cook for 10 minutes.
Add onion, green pepper, celery, and seasonings.
Turn into baking dish and cover with buttered crumbs.
Bake at 350 for 1 hour.
Serve very hot.
Serves 4

This is something that could also be made ahead of time and then just heated up.
Personally, I would throw in some hot peppers, garlic and Cajun seasoning. I am also thinking that some sausage and/or shrimp in there would be good….. 
I have never had Jambalaya with buttered crumbs, so I am very curious as to what they add - flavor wise. I plan to make it this week, so I will let you know.

ITALIAN PASTA SALAD FOR THE POTLUCK



What You Need:

2 cups (measured uncooked) rotini pasta, cooked, drained

1/2 cup ea. chopped red and/or green pepper

1 cup sliced cucumber (cut in half slices)

1/2 cup chopped celery

1/2 cup sliced red onion

1 cup pitted black olives

2 cups broccoli florets

2 chopped tomatoes

1/2 to 1 cup Italian dressing (according to personal taste)

1/2 cup parmesan cheese (optional)

Toss all ingredients except dressing in large bowl. Add dressing; mix lightly.

 Refrigerate until chilled through.

This is a family favorite in my home. I hope your family likes it too.

POTLUCK

This week  is going to be potluck, a potluck dinner that is.....
A recipe a day for a specific course.

VE is responsible for appetizers
Pepper is doing salad
JJ has to do a meat dish
VS is doing a side dish
and Dude is our dessert person

By the end of the week you will have a complete menu for a weekend meal :)

Of course since we are NOT co-ordinating our dishes, it will be a true POTLUCK!

                                         CHEESE PUFFS

1 Cup grated cheddar cheese
1/8 teaspoon salt
1/4 cup butter or margarine
1/2 cup sifted all-purpose flour

Early in day or the day before...place all ingredients in bowl...blend together using your fingers until dough is smooth.  Refrigerate for at least 1/2 hour.  Form into 1/2 inch balls, place on cookie sheet.  Refrigerate.  To serve bake balls at 350 degrees 10 to 15 minutes, makes 2&1/2 dozen.

OR

                                               GUACAMOLE

2 medium avocados, ripe
1 tablespoon lemon juice
2 medium tomatoes, finely chopped
1 cup onion, finely chopped
1&1/2 teaspoon seasoning salt
1/2 teaspoon pepper
1 tablespoon chopped cilantro

Mash the avocados with a fork, add the lemon juice and blend.  Add the remaining ingredients and combine thoroughly.
Makes 3 cups, serve with veggies or chips :)

Fun, Fun and More Fun!
