Now don’t let the name make you think it’s not a dessert. I’ve been asked many times to bring this dish
with me to potlucks and it’s always a hit.
You can find it online in many variations but my Mom made it this way,
and this is how I always take mine.
Are
you ready for dessert? It’s time for
pistachio salad. Cool and refreshing!!!
1 package of pistachio instant pudding mix
1 8 oz
container of cool whip (defrosted)
1 22 oz
can of chunk pineapple (or you can use crushed if you prefer)
2 cups
of mini marshmallows
chopped
walnuts (enough to your liking - about a cups worth – my Mom never measured)
Add the
dry pudding mix, cool whip and pineapple, including the juice, into a bowl and
mix well. Then add the marshmallows and
chopped walnuts. Refrigerate until ready
to serve.
How’s
that for simple!
