Butterscotch Brownies

I am kind of cheating today.
I have been going to work at an unnatural hour and coming home ready for a nap everyday. So I thought I would do a simple post today (since my brain is tired )

This is one of my all time favorite recipes.
They are very simple to make and they taste unbelievable.

I always used to love walking home from the bus stop and as soon as I would get to the front door I could tell by the heavenly scent when my mom was baking.  Of course there was nothing better than warm chocolate chip cookies and a nice cold glass of milk to make the day even better.

These brownies are a favorite of my girls and my nephews too. The recipe makes one batch in an 8” pan. To be honest I have never ever made an 8” pan of these. I always double the recipe and use a 9 x 13” pan. I do put a little less than double of the vanilla though, but that is just my taste.

I  do not put nuts in mine, but that is an option as well as using different flavored chips.  I personally think that good old chocolate chips are the best in this recipe.

Butterscotch brownies;
(note: I have not doubled the recipe here, you can double it if you choose)
Melt ¼ cup butter in sauce pan.
Stir in 1 cup brown sugar until dissolved
( I use light brown sugar but you can use either)
Cool slightly.
Beat 1 egg in well,
Mix in 1 tsp vanilla

Sift then measure ½ cup flour
Add
1 tsp baking powder
½ tsp salt

Stir into butter mixture.
Pour into an 8”x8” greased and floured pan
Sprinkle chocolate chips on top
Bake at 350 for appx. 30 minutes.
I usually test these at about 25 minutes.
Let cool then cut
